This beautiful bowl features my go-to, easiest ever, slow cooker pork carnitas. And I’ve been making this recipe for years.
Rub salt, pepper, cumin, and oregano over pork and place in slow cooker. Add onions, garlic, & jalapeño. Squeeze the orange juice over the pork and throw in the halves. Add lime juice. Cook on low for 8-10 hours until the meat is tender and falls apart easily. Let cool slightly and shred with a fork.
When you’re ready to eat, crisp up the meat up under the broiler or in a hot pan for a few minutes.
I like to serve mine with cauliflower cilantro “rice,” pickled onions, pineapple salsa, jicama, homemade spicy slaw, and an extra lime wedge.
